Actually, I am not much of pumpkin lover, but every year in fall I crave one. Last year I tried butternut squash (here’s the recipe) . This year I killed an hokkaido pumpkin – it jumped right at me at the farmer’s market. The great thing about hokkaidos is that you don’t have to peel them, if you cook them thoroughly. This doesn’t only save time and nerve, but is really healthy as it supplies an extra-portion of beta-carotine. So, up and at’em with my new fall recipe:
1 Hokkaido-Pumpkin (2 lbs)
1 Sweet Potato (1lb)
1 Carrot, medium size
1 Spring Onion
Spices as you like:
2 tsp Red Curry Paste
1 tsp Ginger
1 tsp Nutmeg
2 tsp Curry
2 tsp Paprika
Peel and dice potato and carrot, then boil it either in salted water or vegetable broth. Give the pumpkin a thorough scrubbing, split it up, remove all the seeds and stalks, dice it and add it to the soup. Take care, that all the veggies are covered only just or the soup will become too thin.
Let the whole thing simmer and add spices to your liking. The veggies soak up a good part of the water, therefore stir the soup every now and then. When you notice that it is getting thicker and creamy turn off the stove.
Use either a potato masher or a hand mixer to puré the soup. I add the spring onion after this step to have some colour in my soup. Let sit and cool down somewhat.Done!
The recipe serves two – three people.
The same rule applies as always: do what you like. Garlic, creme frâiche, coconut milk (mustn’t be cooked!), red bell pepper,… whatever your heart craves is fine ;) Actually, I don’t even like sweet potatoes, but it goes perfectly along with the pumpkin and it was delicious. Just give it a try!
One thing I really like about this soup is that it is basically waste free. I already had all of the spices so I only had to go to the farmer’s market and buy the vegetables. A little hint (I don’t know if this applies for your region as well): in this season sweet potatoes are usually half the price at the farmer’s market compared to supermarkets. It is worth the pain of comparing. ;)
