Dear all,
autumn is coming and so is the season of beetroot (red beet if you’re American). I must admit, as a child I quite hated it! But today I love it in all its varieties. My new fav recipe is this amazing beetroot burger. The recipes is only for the patty. The design of your whole burger is up to you; cheddar, greens, whole-wheat or plain… get whatever you like best!
Ingredients for 2-3 patties:
1/4 cup (50 gr) millet (rinse before cooking!)
1 beetroot
1 carrot
1/2 red / sweet onion
2 tbsp oats (I prefer the softer quality)
1 egg
tomato purree, salt, pepper, nutmeg, paprika, if you like some chili flakes
Cook the millet in salted water for about 10 minutes and pour off the water. You can do this on the day before if you want to start right away with the patties. Peel and grate the beetroot and carrot. You can use a food processor as well. Squeeze the vegeatbles a bit and pour off the vegetable juice. Peel the red onion and dice it into fine cubes. Mix all ingredients with some tomato purree and spices. Mould the patties with your hands and fry them with a little oil until red-brown.
That’s it! Now you can build your burger right to your appetite. I went for a crispy wholewheat-roll, tomatoes, gouda and sautéed red onions.
If you don’t have millet at home try quinoa or couscous. If you need a fast dish: leave out the grains and you’ll get a nice veggie-omelett with a lot of vitamins for the colder seasons and it goes great with a roll so you can have it to go.
A bit of advice: beetroot goes bad quickly as soon as it is cooked so you should take care to eat it on the next day latest.
