What to do if the old apples, that you meant to eat since forever, really have to be eaten? Mom’s good ol‘ apple cake! :) Today with my own turn on it to get a little bit in the mood for winter.
You need:
1/2 cup Butter
2/3 cup Sugar
2-3 Eggs
1 Pinch Salt
2 tbsp Lemon juice (Water)
1-2/3 cups Flour
1/2 cup starch
2 tsp Baking soda
2-3 old apples, cinnamon, brown sugar
Mix all ingredients (except for the last line) until you get a smooth batter – I already added a generous teaspoon cinamon here – and fill it into a greased spring-form pan. Peel apples, remove core and slice them. Roll them in a mix of sugar and cinnamon (I used a rest brown and white sugar), place them on the batter and press them a little bit into it.
Bake at 375-390°F, using top and bottom heat, for about 40-50 minutes. Let it cool a little bit and done! Served best still warm with vanilla ice cream :)
Of course you can make the cake without cinnamon or with a different kind of fruit. Also the apples don’t have to be old, but I always feel like the ones nearly molded make the cake.
