For a change I purchased a vegetarian winter cookbook and I already tried a recipe – just for you, of course ;) To be honest I am smitten with this potato gratin! Most of them are made with cream and are very heavy. This one, however, is a fluffy wintry version which I enjoy very much.
Ingredients:
1.3 lbs / 3 cups cooked jacket potatoes
2 red onions
9 oz goat cheese (roll)
4 apples
3 tbsp lemon juice
6 thyme twigs
Preheat the oven with top- and bottom heat to 392°F. Remove the peel from the goat cheese, slice cheese, potatoes and onions. Remove the apple cores, slice the apples and rub them with lemon juice. Pluck the leaves off of four thyme twigs. Stack everything into an oven proof pan and season with salt, pepper and thyme. Place the leftover thyme twigs over the dish (remove when done). If you have a lid put it on top and bake for about 30 minutes.
